Is GreenPan Safe? An Honest Answer From a Kitchen That Owns One

Short answer: yes, keep using it. Longer answer: it’s a 3 on our scale, and the reasons it isn’t a 5 are worth five minutes.

We cook on cast iron most days. When we want the easy version — eggs on a weekday, fish that would weld itself to iron, pancakes for a crowd — we reach for a GreenPan. We own one — an 8-inch Valencia Pro, the hard-anodized “induction” one with the Magneto base. We’re not going to pretend we don’t, and we’re not going to pretend it’s the same thing as a skillet that will outlive us.

What GreenPan actually is

GreenPan’s coating is called Thermolon. It’s a ceramic made with sol-gel chemistry: a silica-based solution (the company says it starts as silicon dioxide, i.e. sand) sprayed onto the pan and cured in an oven into a hard, glassy layer. That is a different chemistry from conventional nonstick, which is PTFE — the fluoropolymer most people know as Teflon, and the thing this whole site is organized around avoiding.

GreenPan states the coating is made without PFAS, PTFE, or PFOA, and without lead or cadmium. Independent testing by the Ecology Center in 2020 found a GreenPan’s coating was silicon dioxide with no PTFE present — a narrow test, but it confirms the one thing that matters most: this is not a fluoropolymer pan with a green sticker on it.

So the specific fear that makes us score PTFE pans a 1 or 2 — a fluorinated coating at 400°F+, every day, scratching into your food — doesn’t apply here. GreenPan also says Thermolon can take 850°F without giving off fumes, which is well past where PTFE starts to break down. That’s real, and it’s why GreenPan beats every conventional nonstick pan on our scale.

Why it’s a 3 and not a 5

Nobody outside the company has shown their work. GreenPan says its coating has been verified by independent labs, but it doesn’t publish the test reports. Some competitors in the same ceramic category (Caraway, Alva, Xtrema) do. The PFAS-free claim on GreenPan’s site also carries an asterisk — “made without intentionally added PFAS” — which is a statement about the recipe, not a test result on the finished pan. We don’t think GreenPan is hiding fluoropolymer. We do think “trust us” is a weaker position than a certificate, and we score accordingly.

The history is messy. In 2012 the National Advertising Division took issue with GreenPan’s advertising claims and the company changed its wording. A 2019 consumer lawsuit over the “toxin-free” marketing was dismissed in 2020 without any ruling on whether the claims were true. And in March 2026, NSF published a public notice that GreenPan was not NSF-certified and couldn’t say it was; GreenPan removed the claim. None of that proves anything is wrong with the pan. All of it is why we won’t give a proprietary coating a 5 on the strength of the company’s own description.

The coating wears out, and then you’re cooking on whatever is under it. This is the one that affects your kitchen. Ceramic nonstick loses its slickness — sometimes in six months, sometimes in two years, faster with high heat, metal utensils, aerosol sprays, or the dishwasher. When it goes dull or scratches through, the base of the pan is what touches your food. On most GreenPan lines — including the original induction-ready Valencia Pro we own — that’s hard-anodized aluminum. (The Magneto induction base is a magnetic plate bonded to the bottom of the pan; it doesn’t change what’s under the coating.) Confusingly, GreenPan now also sells a Valencia Pro Tri-Ply Stainless with a stainless-clad body under the same coating. Flip your pan over: dark grey anodized metal means aluminum; bright steel means clad. Hard-anodized aluminum is more stable than bare aluminum, but it’s still not a surface we’d choose to cook on. On the stainless-clad lines (Venice Pro and GP5 — the ones we’d buy, more below) it’s stainless, which is a 5 all by itself.

So: a 4 while the coating is intact on a stainless-clad pan. A 2 once it’s scratched through on an aluminum-body one. Call it a 3, and know which end of that you’re at.

How we use ours

Same rules a chef would give you for any ceramic pan:

  • Low to medium heat. Ceramic coatings and aluminum expand at different rates. High heat is what kills them.
  • No empty preheating. Oil first, then heat.
  • Wood or silicone utensils. Even on the “metal utensil safe” lines. Why test it.
  • Hand wash. The dishwasher is the second-fastest way to kill the coating.
  • No cooking spray. The propellants bake onto ceramic and turn it sticky. Use a little oil or butter.
  • Replace it when it’s dull or scratched. This is the part people skip. A worn ceramic pan isn’t dangerous the way a flaking PTFE pan is, but it’s no longer the product you bought, and it’s not nonstick anymore anyway.

Which GreenPan to buy, if you’re buying one

Get a stainless-clad line. It costs more, and it’s the whole difference between a pan that stays a 4 and a pan that drops to a 2 the first time it scratches.

GreenPan Valencia Pro Tri-Ply Stainless — Score 4 (new)

Why it’s here: The stainless-clad version of the pan we own. Same Thermolon coating and Magneto induction base, but the body is tri-ply stainless, so what’s under the coating is steel. Sold as an 8″ and 10″ pair, and usually the cheapest way into a stainless-clad ceramic pan.

Why it’s here: Tri-ply stainless body, so the metal under the coating is stainless steel, not aluminum. Induction-ready and oven-safe, with the same Thermolon coating. If you want one ceramic pan in a cast-iron kitchen, this is the one.

GreenPan GP5 Stainless — Score 4 (new)

Why it’s here: The heavier, better-built version: 5-ply stainless, thicker base, more resistant to warping, and rated for metal utensils (we’d still use wood). More money for a pan that should last longer.

Skip (or at least don’t buy new): the aluminum-body lines with Thermolon on top — the original Valencia Pro, Rio, Lima, Chatham, Reserve. Score 3 new, 2 worn. “Induction-ready” on the box means a magnetic base plate, not a stainless pan. The original Valencia Pro is the one we own; it’s fine, it’s just not what we’d buy today.

What would change our mind

Published third-party test results on the finished coating — heavy metals and total fluorine. If GreenPan posts those and they’re clean, the stainless-clad lines move to a 4 that we’d stop asterisking. That’s the same standard we hold every brand to, and it’s a bar some brands in this category already clear.

Is a scratched GreenPan dangerous?

Not the way a scratched PTFE pan is. Ceramic isn’t a fluoropolymer, and flakes of silica aren’t the concern flakes of PTFE are. The issue is what’s under the scratch: hard-anodized aluminum on most lines (including the induction-ready Valencia Pro), stainless on the clad ones (Venice Pro, GP5). Either way, a scratched ceramic pan is a pan to replace, not a pan to fear.

How does GreenPan compare to HexClad?

HexClad builds its coated surface on stainless steel, like the Venice Pro — but it sold a PTFE version as “PFAS-free” until a 2025 settlement, and it publishes no chemical disclosure. GreenPan does. Our HexClad score is here.

Is Caraway better?

Same category — sol-gel ceramic on aluminum — with similar durability. Caraway does publish third-party test results, which we like, but its ceramic line has no stainless-clad option. Neither is a 5. If you want ceramic, pick on construction and price, and treat both as a consumable. We scored Caraway here.

Can I use it on high heat?

You can, once. Keep it at medium and it’ll last years instead of months.

Should I throw mine out?

No. Cook eggs in it. Keep the heat down. When it stops being nonstick, replace it — with the stainless-clad version if you want another ceramic pan, or with an inexpensive cast iron skillet if you’re ready to stop replacing pans.

GreenPan or the Our Place Always Pan?

The ceramic Always Pan is coating-on-aluminum, like GreenPan’s aluminum lines, and scores the same 3. GreenPan’s stainless-based Venice Pro is the better ceramic build; Our Place’s coating-free Titanium Pro is the more interesting long-term buy. Our Always Pan review.

Is GreenPan’s air fryer safe?

Same coating, same answer: ceramic on aluminum, a 3, and it wears the same way a pan does. The better air-fryer move is a machine that cooks on steel mesh or glass, or a stainless mesh basket dropped into the one you own — our air fryer guide walks through both.

Is stainless steel actually safe?

Bare stainless is a 5, and the grade numbers mostly describe corrosion resistance. The nickel question, clad versus disc bottoms, and the pans we’d buy are in our stainless steel guide.

The bottom line

GreenPan is a good answer to a real question: “I’m not giving up nonstick, what’s the least bad option?” It’s PTFE-free, it handles heat without fuming, and the better lines are well built. It’s also a proprietary coating from a company that won’t show its test results, on a surface that wears out. That’s a 3, and we’re comfortable with a 3 in our own kitchen. Don’t let perfect be the enemy of good — just know which pan is which.
