The Fermentation & Pickling Setup, Non-Toxic Edition

Fermentation is the hardest test you can give a kitchen material.

A batch of sauerkraut sits in salt brine for two to six weeks while the pH drops to around 3.5 — more acidic than most vinegar. Kimchi is the same, with chili and garlic added. Kombucha is acid plus live culture plus sugar, for a week or more, then bottled and left to carbonate. Whatever your ferment is touching, it’s touching for a long time, and the environment is doing its best to pull things out of it.

Most fermentation starter kits sold online come with a plastic bucket, a plastic airlock, and plastic weights. None of that is necessary. The traditional equipment — glass, stoneware, wood, cloth — was traditional because it works and it’s inert. Here’s how we’d set up, starting with almost nothing.

Why this matters more here than anywhere else

Three things happen in a ferment that don’t happen in most cooking:

Time. Weeks, not minutes. Any leaching that happens is cumulative.

Acid. Lacto-fermentation produces lactic acid; kombucha produces acetic acid. Both are aggressive on some materials. This is why you don’t ferment in aluminum, and why cheap ceramic glazes are a real concern — acid is exactly what pulls lead and cadmium out of a bad glaze.

Salt. Brine is corrosive. It will eventually pit low-grade stainless and rust plain steel. This matters for lids and weights that sit at the brine line.

Glass and high-fire stoneware with a tested glaze don’t care about any of this. That’s the whole kit, basically.

Tier 1: Essential

This makes every jar-based ferment: kraut, pickles, kimchi, hot sauce, fermented garlic, preserved lemons.

Ball Wide-Mouth Mason Jars, 1-quart, 12-pack — Score 5

What it is: The standard American canning jar. Wide mouth, quart size.

Why it’s here: This is the fermentation vessel for 90% of what you’ll make. Glass is inert, you can see what’s happening, and every fermentation accessory made in the last 20 years is designed to fit a wide-mouth Ball jar. A dozen quarts is enough to have three or four ferments going at once.

What it’s made of: Soda-lime glass jar. Two-piece metal lid: a tinplate steel lid with a food-safe sealing compound, and a steel band.

Watch out for: The metal lid is fine during fermentation if you’re burping the jar or using an airlock. For long fridge storage after the ferment is done, the brine will slowly corrode the metal — switch to a glass or stainless lid (below) for anything you’re keeping more than a couple of months.

Pickle Pebble Glass Fermentation Weights — Score 5

What it is: Solid glass discs, sized to fit inside a wide-mouth jar, with a small grip on top.

Why it’s here: Fermentation only works if the vegetables stay under the brine. Anything that pokes above the surface gets mold. These weights hold everything down. They’re glass, so they’re inert, dishwasher-safe, and they’ll last forever.

What it’s made of: Solid glass. Nothing else.

Watch out for: Nothing. Cheaper alternatives are a smaller jar filled with water (works fine), or a zip bag of brine (plastic in acid — skip).

Pickle Pipe Silicone Airlock Lids, 4-pack — Score 4

What it is: A flexible lid with a one-way valve that lets CO2 out and keeps oxygen out. Screws on with the standard Ball band.

Why it’s here: Ferments produce gas. Without a way for it to escape, you’re either burping the jar daily or risking a mess. The Pickle Pipe makes fermentation hands-off — set it and check in a week.

What it’s made of: Platinum-cured food-grade silicone.

Why a 4: It’s silicone. The evidence says platinum silicone is stable in cold, acidic conditions — this is well within its comfort zone, far from the high-heat scenarios where the debate lives. But we score every silicone component as a caveat, and this one touches the ferment’s headspace. If you’d rather skip silicone entirely, the alternative is the old way: a loose lid and a daily burp. That’s a Score 5 and about 30 seconds a day.

What it is: A wide-mouth stainless funnel that sits in the jar opening.

Why it’s here: Packing shredded cabbage into a jar without one is a mess. With one it’s tidy. Also used for pouring brine, transferring kombucha, and filling jars for canning.

Grade 90 Cotton Cheesecloth — Score 5

What it is: Tight-weave unbleached cotton cloth.

Why it’s here: Covers open ferments (kombucha, vinegar, some kraut methods) to keep fruit flies out while letting air in. Also strains yogurt, cheese, and nut milk. Grade 90 is the tight weave — the loose stuff sold at grocery stores is nearly useless.

What it’s made of: 100% cotton, unbleached.

Watch out for: Wash it before first use. Secure it with a rubber band or string, not a metal band (which traps moisture).

What it is: Untreated hardwood spoons in a few shapes.

Why it’s here: For massaging salt into cabbage and tamping vegetables into jars. Wood doesn’t scratch glass and doesn’t react with brine. A dedicated kraut pounder is nice but a wooden spoon handle does the same job.

Tier 2: Better

Ohio Stoneware 2-Gallon Fermentation Crock — Score 5

What it is: A heavy glazed stoneware crock with a water-seal lid channel, made in Ohio.

Why it’s here: Once you’re making kraut by the head of cabbage rather than the jar, you want a crock. Two gallons holds about 8–10 pounds of vegetables. The water seal around the lid is the original airlock — gas bubbles out through the water, air can’t get in. No silicone, no valves, no plastic.

What it’s made of: High-fire stoneware with a lead-free glaze. Ohio Stoneware publishes this and has done for decades. That’s the important part: cheap imported crocks are exactly the product category where lead in glazes shows up, and acid is exactly what leaches it. Buy from a maker who tests.

Watch out for: Weight. It’s about 15 pounds empty. Get the matching stoneware weights (usually sold as a set).

What it is: Straight-sided glass jars with glass lids, rubber gaskets, and steel clips.

Why it’s here: For yogurt, obviously, but also for the fridge stage of any ferment. The glass lid solves the metal-lid-corrosion problem — nothing but glass and a natural rubber gasket touches the food. Also good for fermented hot sauce and small-batch preserved lemons.

Why it’s here: Fermentation is a salt percentage — usually 2% of the vegetable weight. Guessing gets you mushy kraut or a ferment that doesn’t start. Weigh the cabbage, multiply by 0.02, that’s your salt. The plastic top doesn’t touch food.

Add-ons

Kombucha Brewing Kit with Glass Jar and SCOBY — Score 4

What it is: A gallon glass jar, a cotton cover, a SCOBY (the culture), and starter tea.

Why it’s here: If you want to make kombucha, this is the cheapest way to start with a live culture. The jar is glass and the cover is cotton.

Why a 4: Most kits include a plastic spigot or a plastic lid for the jar. Neither is necessary — use the cheesecloth and a rubber band instead of the lid, and pour rather than tap. If the kit you find is glass jar + cotton + SCOBY with no plastic, it’s a 5.

Watch out for: Bottling. Kombucha carbonates in the bottle and can build real pressure. Use swing-top glass bottles rated for pressure, not repurposed jars.

Instant Pot Duo 6-Quart — Score 4

Why it’s here: The yogurt function holds milk at exactly the right temperature for 8–12 hours, which is the whole trick to homemade yogurt. The inner pot is stainless.

Why a 4: The sealing ring is silicone and absorbs odors over time. The lid has plastic components. Neither touches the yogurt. If you already own one, use it. If you don’t, you can make yogurt in the Weck jars in a turned-off oven with the light on — slower, free.

What to skip

Plastic fermentation buckets. Score 2. These are what commercial kits ship with. Food-grade HDPE, but you’re leaving it in acid for weeks and scrubbing it between batches, which is exactly the shed-and-leach scenario. Glass jars cost the same.

Plastic airlocks (the S-shaped bubbler type). Score 3. Common in homebrew kits. They work, and they only touch headspace gas, not liquid. But the Pickle Pipe does the same job in silicone, and the water-seal crock does it in stoneware.

Zip bags of brine as weights. Score 2. A common hack. It’s a plastic bag sitting in acid for a month. Glass weights are cheap.

Cheap imported ceramic crocks. Score 1–2. This is the one to really avoid. The glazes on inexpensive decorative crocks are the textbook source of lead exposure from kitchenware, and fermentation acid is the textbook way to leach it. If a crock doesn’t say lead-free and who tested it, don’t ferment in it.

Metal lids for long fridge storage. Score 3 for this specific use. Fine during the ferment. Over months in the fridge, brine corrodes the tinplate. Swap to glass or stainless lids for the long haul.

Iodized table salt. Not equipment, but worth saying: iodine and anti-caking agents can inhibit the ferment. Use kosher, sea, or pickling salt.


What do I store the finished batch in? Glass, always — Weck jars and wide-mouth mason jars are a 5 and the fridge is where they belong. Our food storage guide covers the freezer rules and which lids to trust.

Frequently asked

Do I need the airlock?

No. The airlock makes it hands-off. Without one, loosen the lid once a day to release gas, then tighten. Both work. The airlock is for convenience, not safety.

Can I use my sourdough jars?

Yes — the Weck starter jar is a great vessel for small ferments like fermented garlic or hot sauce mash. Same glass, same lid.

Is silicone really okay in acid?

By everything we can find, platinum-cure silicone is stable at fridge and room temperature regardless of pH. The concerns about silicone are about heat. This is a cold application. We score it a 4 for consistency — we flag every silicone component — not because we think this one is a problem.

What about the Ball jar’s lid sealing compound?

It’s a plastisol ring that contacts the jar rim, not the food, unless you overfill. Ball’s lids have been BPA-free since 2013. For fermenting, we don’t worry about it. For years-long storage, we prefer glass lids.

Stoneware or glass?

Glass for small batches and for seeing what’s happening. Stoneware for big batches and for blocking light (some ferments keep better in the dark). Both are Score 5 if the stoneware’s glaze is tested.
