Glass Food Storage That Actually Seals

Short answer: put leftovers in glass, and stop microwaving anything in plastic. Every glass container on this page is a 5 — American Pyrex, Anchor Hocking, OXO, Anyday, Weck, a mason jar — and the differences between them are about lids, leaks, and how they handle a temperature swing, not about safety. The plastic lid that comes with most sets is fine as long as food doesn’t touch it and it stays out of the microwave. Stainless boxes are a 5 for lunches. Silicone bags and freezer trays are a 4. And the plastic tubs you’ve been reheating in are the one thing here worth replacing this week.

This is the item on our starter kit that people find easiest to change and hardest to choose, because there are forty glass sets on Amazon and they all look the same. They aren’t. This is a materials review built from the manufacturers’ own material statements, the published research on plastics and heat, and the current Amazon listings, which is how we score everything.

Why plastic storage is the problem, and when it isn’t

Plastic isn’t dangerous sitting in the fridge with cold rice in it. Migration — the movement of plasticizers, oligomers, and stray monomers from the container into the food — is driven by three things: heat, fat, and time. Cold, dry, and brief is the best case; hot, oily, and repeated is the worst. That’s why a lettuce tub is a 3 on our scale and a microwaved container of last night’s curry is a 2.

The microwave is the specific problem. In 2023, researchers at the University of Nebraska microwaved polypropylene and polyethylene food containers — the same #5 and #4 plastics in most tubs and baby-food cups — and measured billions of micro- and nanoplastic particles released per square centimeter after three minutes. “Microwave safe” on the bottom of a container means it won’t warp; it isn’t a claim about what comes out of it. “BPA-free” means one chemical was swapped for a relative that’s been studied less. Neither label changes the physics of hot fat against plastic.

Then there’s wear. A plastic container that’s been scratched by forks, stained by tomato, and run through a few hundred dishwasher cycles sheds more than a new one, and most people’s tubs are years old. Glass doesn’t scratch that way, doesn’t stain, and doesn’t remember what it held.

So the rule is simple: cold plastic is a shrug, heated plastic is a no, and glass is both cheaper over time and free of the question. Keep the plastic tubs for dry goods and the garage. Reheat in glass.

The glass question: Pyrex, borosilicate, and what actually breaks

This is where the internet gets loud, so here’s the short version.

There are two kinds of glass in food storage. Soda-lime glass is ordinary glass, tempered (heat-treated) to make it several times stronger against impact. Borosilicate glass has boron in the mix, which gives it about a third the thermal expansion — it shrugs off temperature swings that would crack soda-lime. Lab glassware and the original Pyrex were borosilicate. American Pyrex — the capital-letters brand made in Charleroi, Pennsylvania — has been tempered soda-lime for decades. Anchor Hocking, made in Lancaster, Ohio, is tempered soda-lime. Glasslock is tempered soda-lime. European lowercase-pyrex, OXO’s Smart Seal line, and Anyday are borosilicate.

Both are inert, both are a 5, and both are fine every day of the week. The difference shows up in one situation: a sudden, large temperature change. Soda-lime is more likely to crack if you take it from the freezer to a hot oven, set a hot dish on a wet counter, or pour cold liquid into a dish that just came out of the oven. Borosilicate tolerates more of that. Tempered soda-lime, on the other hand, is tougher when dropped, which for a container that lives in a fridge and a dishwasher is the more common event. The horror stories about “exploding Pyrex” are real and they are, nearly every time, a thermal-shock story: a dish that went from cold to hot, or hot to wet, faster than glass likes.

The rules that prevent all of it, regardless of glass type: let hot food cool before it goes into the fridge or freezer; let a cold dish come toward room temperature before it goes into a preheated oven; never add liquid to a hot dish; never set hot glass on a wet, cold, or metal surface; and no glass storage on a stovetop or under a broiler, ever. Follow those and the Pyrex your grandmother used will outlive you.

Lids, which is where the plastic hides

Almost every glass set ships with a polypropylene lid and a silicone gasket, because that’s what seals. It’s fine, with two conditions: the food doesn’t touch it, and it never goes in the microwave. Don’t overfill, don’t store a container upside down, and reheat with the lid off or a plate on top. The lid is a cold, dry, brief-contact plastic — the best case from above — and we score sets with plastic lids a 5 for the container, because the container is what your food lives in.

If you’d rather have no plastic at all, three designs manage it. Glass lids with a silicone rim (Anyday, Pyrex’s Ultimate line when you can find it) seal well enough for the fridge and go in the microwave, vented, with the food. Glass lids with a rubber ring and steel clips (Weck) are the century-old canning design and the prettiest thing on the shelf; they’re not leakproof in a bag, and they’re not for the microwave. Stainless lids (LunchBots, the lunch-box category) are unbreakable and not microwavable. Pick by how you eat, not by the material.

Freezer and microwave, in one paragraph each

Freezer. Glass is the best freezer container there is, if you give it room. Fill to three-quarters, cool the food first, and use straight-sided containers or straight-sided jars (wide-mouth pints and half-pints; the quart jars with shoulders crack when the contents expand). Thaw in the fridge, not on the counter and never in a hot oven. Souper Cubes and other silicone trays exist for freezing portions you’ll pop out and store in glass or a bag; that’s a 4, and a useful one.

Microwave. Glass, lid off. If the dish came from the fridge, that’s fine; from the freezer, let it sit ten minutes first or use borosilicate. Cover with a plate or a glass lid. Never the plastic lid, even the ones that say they’re microwave-safe — the question isn’t whether they’ll melt.

The score, and why

Tempered soda-lime glass containers (Pyrex, Anchor Hocking, Glasslock) — 5. Inert, made in the United States in Pyrex’s and Anchor’s case, and the cheapest good storage that exists. Plastic lids that don’t touch food. Follow the thermal-shock rules above.

Borosilicate glass containers (OXO, Anyday) — 5. Same material as lab glass; better with temperature swings, a little pricier. OXO’s lids are polypropylene with a silicone gasket and lock hard enough to carry soup. Anyday’s are glass with a silicone rim and a steel band, built to go in the microwave with the food.

Weck jars and mason jars — 5. Glass, rubber or plastisol-lined metal, steel. Weck for the fridge and the counter; Ball for everything, including the freezer if you buy the straight-sided sizes.

Stainless steel boxes (LunchBots) — 5. 18/8 steel, no liner, no coating, no microwave. The lunch answer, especially for kids, who will drop them.

Silicone bags and trays (Stasher, Souper Cubes) — 4. Platinum-cured silicone is stable at freezer and fridge temperatures and we have no material concern with it cold; it’s a 3 in our book when it’s heated with fatty food, because siloxane migration into fats at high heat is documented. Use them for the freezer and the lunch bag, and reheat what’s in them in glass.

Ceramic-coated glass (Caraway’s food storage) — 4. Caraway puts a ceramic nonstick coating inside a borosilicate container and adds a glass lid. The coating is the same sol-gel we score a 3 on its pans; here it sits on glass, so a worn coating exposes glass, which is fine, and Caraway publishes its test results. It’s a 4 because a coating on a container is a wear item with no job — bare glass doesn’t need help releasing cold pasta — and it isn’t leakproof. We’d buy the plain glass.

Plastic tubs — 3 cold, 2 heated. Polypropylene, polyethylene, Tritan. Fine for the pantry and the fridge while you replace them; not for the microwave, not for hot food, not once they’re scratched.

For reference, our scale: 5 is a single inert material (stainless, cast iron, carbon steel, glass); 4 is a coating we’re fine with on a metal we’re fine with, or silicone used cold; 3 is a coating with a shelf life or a transparency gap, or plastic in cold contact; 2 is PTFE or aluminum in contact with food, or plastic that’s heated; 1 is a hard no.

If you already own a cupboard of plastic

Don’t throw it all out tonight. Move the plastic tubs to dry goods and the pantry, buy one glass set for leftovers and reheating, and let the plastic retire as it scratches. The two changes that do most of the work cost nothing: stop microwaving in plastic, and stop putting hot food in it. Everything else is a nicety.

What would change our mind

A glass set with a plastic-free lid at Pyrex prices, or a Pyrex set with glass lids sold everywhere again. And a manufacturer publishing migration testing on its lids and gaskets — none do, and we’d love to move one up for it.

Is Pyrex safe?

Yes. American Pyrex is tempered soda-lime glass — inert, a 5 — and the breakage stories are thermal-shock stories. Follow the rules: no freezer-to-oven, no hot glass on wet counters, preheat the oven, never the stovetop.

Is borosilicate better than tempered glass?

Better with temperature swings, slightly worse when dropped, and identical for safety. Buy borosilicate if you go from freezer to microwave a lot; buy tempered soda-lime if you drop things.

Are the plastic lids safe?

As long as food doesn’t touch them and they stay out of the microwave and off hot food, yes — they’re cold, dry, brief contact. If you want no plastic, Anyday, Weck, and stainless boxes exist.

Can I freeze in glass?

Yes: fill three-quarters, cool first, straight sides, thaw in the fridge.

Can I microwave in glass?

Yes, lid off or with a glass lid, and not straight from the freezer unless it’s borosilicate.

Are silicone bags safe?

Cold, yes — a 4. Heating fatty food in silicone is where migration shows up in studies, so reheat in glass.

Is “BPA-free” plastic safe to microwave?

No. BPA-free describes one substitution; heat, fat, and time drive migration regardless, and microwaving releases micro- and nanoplastics from ordinary polypropylene.

What about baking in glass?

Glass, with whatever lid suits how you eat: Pyrex or Anchor Hocking for the cheapest good answer, OXO or Anyday if you live in the microwave, Weck and mason jars for everything you want to see, stainless for lunch, silicone for the freezer. All of it’s a 5 or a 4. The only 2 in your kitchen is the plastic tub in the microwave, and it costs nothing to stop.
