Non-Toxic Bakeware: Sheet Pans, Muffin Tins, and Loaf Pans, Scored

Short answer: the dark grey “nonstick” bakeware in most kitchens is PTFE — Teflon — and an oven is the worst place to keep it, because it runs at 425°F with a metal spatula scraping across it. We score it a 2. Everything else is easy. Stainless steel, cast iron, glass, and stoneware with a tested glaze are all 5s. Aluminized steel with a silicone coating (the USA Pan design) is a 4. Bare aluminum — the restaurant half-sheet — is a 3 on its own and a 4 the moment you put a sheet of parchment on it, which is how it should be used. Silicone molds are a 3. That’s the whole map; the rest of this is which pan for which job.

Why bakeware is harder on a coating than a frying pan

A nonstick skillet sees medium heat for ten minutes. A nonstick sheet pan sees 400 to 450°F for forty, sits under a broiler for the last two, and gets a metal spatula dragged across it to free the cookies. Dark pans absorb more radiant heat than shiny ones, which is why they brown faster and why their surface temperature runs hotter than the dial says. PTFE begins to degrade around 500°F; a dark pan on the top rack of a 450°F oven under a broiler element is closer to that than you’d think. Add the dishwasher and a few years, and you get the bakeware most people own: scratched grey pans shedding flecks into the granola.

None of this is acute. It’s the same wear story as every coated pan, with a harder life. But bakeware is also the easiest category in the kitchen to fix, because the uncoated alternatives are cheap, old, and better at browning.

The materials, scored

Stainless steel — 5. 18/0 or 18/8 stainless, no coating, nothing to react with food, dishwasher-safe, lasts forever. The trade is that stainless is a poor heat conductor and things stick to it more than to aluminum. Use parchment for cookies and oil for vegetables, and buy a heavier gauge so it doesn’t warp. Cast iron — 5. Lodge’s loaf pan and muffin pans are bare seasoned iron: heavy, indestructible, and the best crust you’ll get on a sandwich loaf or a cornbread muffin. Nothing to wear out, and after a few bakes nothing sticks either.

Glass — 5. Pyrex and Anchor Hocking baking dishes are tempered soda-lime glass, inert and inexpensive. Right for brownies, casseroles, roasted vegetables, and anything wet; wrong for cookies (no browning on the bottom) and for anything that goes from freezer to oven — see the thermal-shock rules in our food storage guide.

Stoneware and ceramic — 5, with a tested glaze. Emile Henry, Le Creuset, and Staub make stoneware bakers whose glazes the makers state are free of lead and cadmium; Emile Henry’s are made in Burgundy and say so on the box. This is the category where the brand matters, because a glaze is where lead hides in cheap ceramics. We don’t extend the 5 to unbranded “ceramic” bakeware with no published testing.

Carbon steel and blued steel — 5. Bare steel that you season like a skillet: the French sheet pans, the black steel pizza trays, the Lloyd Pans in our pizza guide. Nonstick once seasoned, browns beautifully, rusts if you leave it wet.

Anodized aluminum — 4. Fat Daddio’s cake pans are aluminum with an anodized surface — a hard aluminum-oxide layer grown from the metal itself, not a coating that can flake. It’s more inert than bare aluminum and the professional cake pan for a reason. Still aluminum underneath; still parchment on the bottom for a clean release.

Aluminized steel with a silicone coating — 4. The USA Pan design: a steel pan clad in aluminum for conductivity, with a corrugated silicone-based nonstick (they call it Americoat) on top. No PTFE, no PFAS, made in Pennsylvania, and the coating is thin enough that when it wears you’re on aluminized steel, not bare aluminum. A 4 because it’s a coating with a shelf life — a good one, on a pan we like.

Bare aluminum — 3, or 4 with parchment. The Nordic Ware half-sheet is the best-conducting, best-browning sheet pan made, which is why every restaurant uses one. It’s also reactive: acidic food (tomatoes, citrus, rhubarb, wine) picks up a metallic note and leaves grey marks, and aluminum in contact with acidic food is the thing our rubric flags. A sheet of parchment makes the food-contact surface paper, and that’s how we’d use it every single time. Bare, it’s a 3. Lined, it’s a 4 and the daily pan.

Silicone molds — 3. Platinum silicone is stable to about 450°F, and the studies that find siloxane migration find it with fatty foods at high heat, which is exactly what a muffin is. Fine occasionally; not what we’d bake in every week. (Silicone used cold, for freezing, is a 4 — see the storage guide.)

Ceramic nonstick bakeware — 3. Caraway’s and GreenPan’s bakeware puts a sol-gel ceramic coating on aluminized steel. Same coating we score a 3 on their pans, with a two-to-three-year life and the oven’s abuse on top. Better than PTFE; not better than a bare pan and parchment.

Dark PTFE nonstick — 2. Wilton, Calphalon Nonstick, Circulon, Rachael Ray, and the unbranded dark grey set that came with the apartment. Teflon at oven temperatures with a metal spatula. Replace as it scratches, and don’t broil on it.

For reference, our scale: 5 is a single inert material (stainless, cast iron, carbon steel, glass); 4 is a coating we’re fine with on a metal we’re fine with; 3 is a coating with a shelf life or a transparency gap, or bare aluminum with food; 2 is PTFE or aluminum in contact with acidic food; 1 is a hard no.

The parchment paragraph

Parchment is the cheapest upgrade in this article and the one that turns a 3 into a 4 and a stainless pan into a nonstick one. Two things to check on the box. First, unbleached — the brown kind — so there’s no chlorine bleaching residue. Second, the coating: parchment is made nonstick with either silicone or Quilon, a chromium-based treatment; the good brands say silicone and the cheap rolls often don’t say. If You Care’s rolls are unbleached, chlorine-free, silicone-coated, and compostable, and they’re the roll we’d buy. Paper is a 5; it’s the reason the aluminum pan under it can be, functionally, a 4.

Which pan for which job

Sheet pans. Two half-sheets do ninety percent of baking and roasting. The answer is the Nordic Ware aluminum half-sheet, always with parchment, for cookies, bread, and anything that needs to brown; a TeamFar stainless sheet for tomatoes, citrus-roasted chicken, and anything acidic that would mark aluminum. If you want one pan for both, it’s the USA Pan half-sheet — coated, but honestly coated.

Loaf pans. For sandwich bread, the Lodge cast iron loaf pan gives the best crust and never wears out; the Fox Run stainless is lighter and cheaper and does the same job with a little oil and a parchment sling. For quick breads and meatloaf, either. The USA Pan loaf is the nonstick option done right, and the one to buy if you’d otherwise buy a dark Wilton.

Muffin tins. Lodge’s cast iron muffin pan for cornbread and anything you want crisp-edged; for cupcakes and the school bake sale, an uncoated aluminum tin with paper liners is a 5 at the food surface and a fraction of the price of anything fancy.

Cake pans. Fat Daddio’s anodized aluminum, parchment on the bottom, the way bakeries do it.

Casseroles, brownies, roasting. Pyrex or Anchor Hocking glass, or an Emile Henry stoneware baker if you want something that goes to the table.

Skip: dark nonstick bakeware of any brand (PTFE at oven temperatures); “ceramic nonstick” bakeware as an upgrade (it’s a coating with a shelf life either way); unbranded stoneware with no glaze testing; bleached or Quilon-coated parchment when silicone is on the shelf next to it; silicone muffin cups as a daily pan.

If you already own a cupboard of dark nonstick

Don’t panic and don’t throw it out tonight. Line it with parchment, keep it under 400°F, stop broiling on it, and use wood or silicone to lift things off. Replace each piece when it scratches, starting with the sheet pans, which take the most abuse. A Nordic Ware half-sheet and a roll of parchment replace most of the set for the price of one nonstick pan.

What would change our mind

A published migration test on the USA Pan coating would move it toward a 5 — it’s the coating we like best and the least documented. And a major maker of silicone bakeware publishing siloxane migration data at 400°F with fatty batters would settle the silicone question one way or the other; nobody has.

Is aluminum bakeware safe?

Bare aluminum is a 3: inert with most foods, reactive with acidic ones, and easy to fix with parchment. Anodized aluminum is a 4. Nobody should throw out a Nordic Ware sheet pan; just line it.

Is USA Pan non-toxic?

It’s aluminized steel with a silicone-based coating — no PTFE, no PFAS — and we score it a 4. It’s the nonstick bakeware we’d buy.

Is silicone bakeware safe?

Probably, and we still score it a 3 for daily use: high heat plus fat is where silicone migration shows up in studies. Fine for the occasional batch; not our everyday pan.

Is Pyrex safe in the oven?

Yes, in a preheated oven, never straight from the freezer, never under the broiler or on a burner, and never onto a wet counter afterward. The breakage stories are thermal-shock stories.

What about aluminum foil?

Same as bare aluminum: fine for most things, avoid it against acidic food, and use parchment as the liner where the food actually sits.

Are ceramic-coated baking sheets safe?

They’re PTFE-free, which is better, and they’re a sol-gel coating on aluminized steel with a two-to-three-year life, which is why they’re a 3. A bare pan with parchment does the same job forever.

Does stainless bakeware warp?

Thin stainless does. Buy a heavier gauge, don’t put a hot pan under cold water, and it won’t.

The bottom line

Bakeware is the easiest fix in the kitchen: two aluminum half-sheets with parchment, one stainless sheet for acidic things, a cast iron or stainless loaf pan, a cast iron muffin pan, a glass dish, and — if you want a nonstick pan — the USA Pan kind. All of it’s a 4 or a 5, most of it costs less than the dark grey set it replaces, and none of it flakes into the granola.
