Non-Toxic Kitchen Utensils: Wood, Stainless, Silicone, and the Black Plastic Question

Short answer: a wooden spoon and a stainless steel spatula are the two safest tools in any kitchen, and they always were. Good silicone is a 4 and the right choice for a coated pan. Bamboo is a 3, because most of it is glued. Nylon, melamine, and the black plastic spatula that came free with a pan set are a 2, and the black one is the first thing we’d replace — not because of the viral study that got its own math wrong by a factor of ten, but because of what that study found anyway.

This is a materials guide, scored the way we score everything: by what touches your food when it’s hot. We don’t lab-test anything and we don’t get utensils from brands. The sources are the studies themselves, the European food-contact rules, and the manufacturers’ own material claims.

The scale, applied to utensils

A utensil spends its life pressed against a hot pan, sitting in simmering sauce, and scraping the bottom of a pot. Heat and fat are exactly the conditions that pull additives out of plastic, so we score utensils harder than we score storage.

Bare hardwood — Score 5. Maple, beech, cherry, olive, teak: one material, no coating, nothing to migrate. Finish with mineral oil or food-grade linseed oil, or nothing.

Stainless steel — Score 5. 18/8 or 18/0, the same alloy as your pots. Inert at any temperature a stove can reach.

One-piece, platinum-cured silicone — Score 4. Food-grade silicone is stable to around 450°F and the good makers post-cure it to drive off the volatile fraction. Still a synthetic polymer with a small first-use release, which is why it’s a 4 and not a 5.

Silicone-edged nylon hybrids — Score 3. A nylon core wrapped in silicone. The silicone touches the pan; the nylon is underneath. Better than bare nylon, not as clean as one-piece.

Bamboo — Score 3. Almost every bamboo spoon is strips of bamboo laminated together with adhesive. Solid, single-piece bamboo is a 4. Pakkawood (dyed, resin-bonded birch veneers) is also a 3. “Bamboo fiber” utensils that feel like plastic are melamine resin with bamboo dust in it, and a 2 for anything hot.

Nylon — Score 2. Softens around 400°F, which is why the tips of old nylon spatulas look chewed. Colored nylon from unknown factories has a documented history of leaching aromatic amines.

Black plastic — Score 2. Whatever it’s made of, black plastic is where recycled electronics casings end up, and that’s where the flame retardants come from.

Melamine — Score 2 for cooking. Fine for a cold salad server. Not for stirring anything hot.

What the black-plastic study found, and what it got wrong

In October 2024 a peer-reviewed study in Chemosphere, led by Toxic-Free Future with the Vrije Universiteit Amsterdam, screened 203 black plastic household products for bromine, a marker for brominated flame retardants. Twenty of them had enough bromine to warrant a full analysis, and seventeen of those twenty contained flame retardants — including decabromodiphenyl ether, or decaBDE, a chemical the EPA banned in 2021 that was once standard in television casings. A black plastic sushi tray tested at 11,900 parts per million of decaBDE, more than one percent of its weight. The explanation is mundane and unsettling: black plastic from e-waste gets recycled into things that were never supposed to be flame-retardant, like spatulas, takeout trays, and toy beads.

Then came the correction. The authors estimated that a typical contaminated utensil would transfer about 34,700 nanograms of decaBDE a day, and compared that to the EPA’s reference dose for a 60-kilogram adult, which they calculated as 42,000 nanograms. The real number is 420,000. They’d dropped a zero. In December 2024 the journal published a correction: the estimated exposure was about one-twelfth of the reference dose, not nearly all of it. The headlines that said your spatula was pushing you to the edge of a safe limit were wrong by an order of magnitude.

Here is why we still score black plastic a 2. The reference dose is a threshold for one chemical; the study found up to nine flame retardants in a single product, none of which belong in a kitchen tool at any level, and a spatula is a small source in a home that also has dust, furniture foam, and electronics. The correction changed the size of the problem, not the existence of it. A wooden spoon costs less than the argument. Replace the black spatula that lives in hot oil, and keep the black-handled whisk whose handle never touches food — the material only matters where the food is.

Nylon: the melting problem and the amine problem

Nylon (polyamide) is the default material for cheap kitchen tools because it’s rigid, cheap to mold, and won’t scratch nonstick. It has two problems. The first is heat: most nylon utensils are rated to about 400°F, and the edge of a spatula resting on a pan at searing temperature goes past that. The frayed, melted tips on an old nylon turner are the plastic telling you where it went.

The second is chemistry. Nylon utensils, especially dark-colored ones from unknown factories, have a long record in Europe’s food-safety alert system for leaching primary aromatic amines — aniline and 4,4′-methylenedianiline in particular, which come from the dyes and from the polymer chemistry itself. Some of these amines are classified carcinogens, which is why the EU says they may not migrate into food at all above the detection limit of 0.01 milligrams per kilogram. Through the 2010s the alert system logged roughly 18 to 35 notifications a year on nylon kitchenware, most of it imported. A nylon spoon from a reputable brand, used in warm rather than hot food, is a low risk. A no-name black nylon set is two risks stacked on each other.

Silicone: what “food grade” actually promises

Silicone is a synthetic rubber built on a silicon–oxygen backbone rather than a carbon one, which is why it shrugs off heat that would melt nylon and why it doesn’t hold flavors. “Food grade” in the US means it meets the FDA’s rubber-articles rule (21 CFR 177.2600), which limits what can be extracted from it. Germany’s LFGB standard is stricter and is the one worth looking for on a label: among other things it caps the volatile fraction of the finished silicone at 0.5 percent by weight, which forces manufacturers to post-cure the part — bake it after molding to drive off the small cyclic siloxanes (D4, D5, D6) left over from manufacturing.

Those siloxanes are the reason silicone is a 4. Studies of silicone bakeware show the volatiles leave mostly during the first heating, mostly into the air rather than the food, and at levels below Europe’s migration limits; cheaper, non-post-cured molds release noticeably more. D4 and D5 are on the EU’s list of substances of very high concern for their persistence in the environment, not for what a spatula delivers to a plate. Practically: buy silicone that says LFGB or platinum-cured, run it through the dishwasher or a hot wash before first use, and don’t use it as a scraper on a screaming-hot dry pan. Platinum-cured silicone is made with a platinum catalyst that leaves no byproducts; the older peroxide-cured process can leave traces of the peroxide’s breakdown products, which is what people are smelling when a cheap spatula stinks in the oven.

Two more things to check. One-piece construction — silicone all the way through, or over a stainless or fiberglass core with no seam — beats a silicone head jammed onto a plastic handle, because seams trap food and the plastic under the head is usually nylon. And the folk “pinch test” (twist the silicone; if it turns white, it’s cut with fillers) is a rough guide, not a lab result; some legitimate pigments whiten too. The label and the brand’s willingness to name its standard tell you more.

Wood: the oldest answer

Wood is a 5 for the same reason cast iron is: it’s one material, and there’s nothing in it to leach. What matters is the species and the finish. Close-grained hardwoods — maple, beech, cherry, olive, teak — don’t splinter and don’t soak up much. Softwoods and open-grained woods do. The finish should be an oil that food would tolerate anyway: mineral oil, food-grade linseed, walnut oil, beeswax blends. Avoid anything described as lacquered, varnished, or “sealed” with a glossy film; the film is the thing that flakes into the pot after a year. If a listing won’t say what the finish is, that’s the reason a cheap wooden set is a 4 in our table rather than a 5.

Care is the whole story with wood: hand-wash, don’t soak, don’t run it through the dishwasher, oil it when it looks dry, and retire it when it cracks. The University of Wisconsin work from the 1990s that found bacteria dying off on wooden cutting boards while plastic boards’ knife scars sheltered them is about boards, not spoons, but the material behaves the same way — wood dries, and dry wood is a bad place for bacteria. A wooden spoon that’s darkened and smooth with years of use is not a hygiene problem. A wooden spoon with a split down the handle is.

Bamboo: two different products with one name

Bamboo utensils come in two forms, and the label rarely says which. The first is solid bamboo cut from the wall of the culm — a single piece, a grass rather than a wood but functionally similar, and a 4 with an honest oil finish. The second, and the more common one because bamboo walls are thin, is laminated: thin strips glued into a block, then carved. The glue is usually a urea- or phenol-formaldehyde adhesive; a good one is fully cured and stable, but you can’t see it or know it, and it’s why laminated bamboo is a 3 for us, the same reason we scored laminated bamboo cutting boards a 3.

Pakkawood belongs in the same box. Those striped, dyed utensils that look like exotic hardwood are thin birch veneers stacked and bonded under pressure with a phenolic resin, then dyed through. Same construction as laminated bamboo with resin instead of glue, so it’s a 3 for us. We own one — a blue spatula that flips eggs perfectly well and never sits in the pot.

Then there’s the third thing, which isn’t bamboo at all. “Bamboo fiber” tableware and utensils — the smooth, speckled, plastic-feeling kind marketed as eco-friendly — are melamine-formaldehyde resin with bamboo powder as a filler. Germany’s risk-assessment institute found that melamine and formaldehyde migrated from these products into hot liquids, in some cups at levels dozens of times over the tolerable daily intake, and in early 2021 the Benelux countries told companies to pull bamboo-melamine food-contact products from the market; the EU later ran a year-long enforcement action that flagged more than 700 cases. In the US they’re still sold. If a “bamboo” utensil is smooth, hard, dishwasher-safe, and comes in colors, it’s melamine, and it’s a 2 for anything above room temperature.

Stainless steel: the other 5, with one rule

A stainless spoon, ladle, whisk, or fish turner is 18/8 or 18/0 steel, the same alloy class as the pots we score a 5, and there is nothing more to say about its safety. The one rule is about the pan, not the utensil: metal scratches coatings. On stainless, cast iron, carbon steel, or enameled cast iron, use whatever you like. On a ceramic-coated or PTFE pan, metal shortens the coating’s life and puts flakes of it in your food, which is a bigger exposure than the spatula ever was. This is one of the quiet benefits of moving off nonstick: once your everyday pan is a 5, your everyday spatula can be a 5 too.

Handles are the exception to everything above. A whisk with a plastic handle, tongs with silicone grips, a ladle with a rubber sleeve: the handle never meets your dinner, and we don’t score it. We score the working end.

Skip: any black plastic spatula, turner, or spoon, whatever it’s made of; nylon sets with no brand name; “bamboo fiber” or “eco” utensils that are smooth, hard, and colored (that’s melamine); silicone heads on plastic handles with a visible seam; anything wooden that’s described as lacquered or varnished; and metal on any coated pan.

If you already own black plastic or nylon

Start with what lives in hot fat: the turner you fry eggs with, the spoon that stirs the sauce, the slotted spoon in the boiling pot. Those are the highest-heat, longest-contact tools and the ones to swap first. A nylon salad server or a black plastic ice cream scoop that only meets cold food can stay until it wears out. Don’t burn the old ones or put them in the recycling bin — the recycling stream is how they got contaminated in the first place; they go in the trash.

For a coated pan you’re not ready to give up, silicone or wood. For everything else, stainless and wood, and you’re done with the question.

What would change our mind

Silicone would be a 5 if the industry adopted post-curing and a named standard across the board, so that “food grade” on a label meant what LFGB means. Bamboo would be a 4 if makers disclosed the adhesive or sold solid pieces. Nylon would need a decade without amine alerts and a heat rating that survives a real pan, and we don’t expect either. Black plastic would need a recycling system that keeps electronics out of kitchenware, which is the fix the study’s authors actually asked for.

Are black plastic utensils really dangerous?

They can contain flame retardants recycled from electronics — a 2024 study found them in 17 of the 20 black plastic products it fully tested, including a banned one, decaBDE. The study’s estimate of daily exposure was overstated tenfold by a math error later corrected; the corrected figure is about a twelfth of the EPA’s reference dose. That’s not an emergency, but it’s a reason to replace the ones that sit in hot oil.

Is silicone safe for cooking?

Good silicone is: FDA-compliant, ideally LFGB-certified and platinum-cured, one-piece, used within its heat rating. Cyclic siloxanes can escape mostly during the first heating, which is why we wash new silicone hot before use. We score it a 4.

Are wooden spoons sanitary?

Yes, if you hand-wash them, let them dry, and retire them when they crack. Dry wood is a poor host for bacteria. A darkened, smooth old spoon is fine; a split one isn’t.

Is bamboo non-toxic?

Solid bamboo is. Most bamboo utensils are laminated strips glued together, which we score a 3 for the glue you can’t see. “Bamboo fiber” utensils that feel like plastic are melamine resin and should never touch hot food.

Can I use metal utensils on stainless steel pans?

Yes. Metal on stainless, cast iron, carbon steel, or enameled cast iron is fine; it’s metal on coated pans that’s the problem, because it wears the coating into your food.

Are nylon utensils safe?

From a known brand and used in warm food, they’re a low risk. The concerns are heat — nylon softens around 400°F — and aromatic amines leaching from dyed nylon, which has generated years of European food-safety alerts, mostly on imports. We score nylon a 2 and don’t buy it.

What about “BPA-free” plastic utensils?

BPA was never the issue in a spatula; heat, dyes, and recycled content are. “BPA-free” is a true statement about the wrong question.

Do I need to throw out all my plastic utensils today?

No. Replace the ones that meet hot food first, and let the rest wear out. The point of scoring is to tell you where the exposure actually is, and it’s in the pan, not the drawer.

The bottom line

The safest kitchen utensils were in your grandmother’s drawer: a wooden spoon and a steel spatula. Buy a good silicone spatula for the coated pan you still have, skip bamboo unless it’s solid, and put the black plastic set in the trash — not because it was about to poison you, but because a spatula shouldn’t contain a banned flame retardant at all, and the replacement costs less than lunch.
